Liquer with your fish!

Try the liquer Sanbucca on Salmon. Pour the liquid over the salmon but make some indentations in the surface first. This works equally with grilled or poached slamon.

With cod, halibut or hake, try Drambuie (another liquer). The effect is very different but also good.

It is surprising that makers of liquers have not explored and publicised this potentially huge market for liquers. Perhaps, traditionalist, they believe liquers have to be drunk from a glass.

There was the same resistance when I suggested to wine makers that they should produce a low alcohol 'lunch wine' as many people do not drink wine at lunch because it makes them sleepy all afetrnoon.
